Koro persimmon [twig persimmon]

As the mornings and evenings get colder after mid-November, the drying process for "koro-kaki" persimmons, a specialty product of Ofunato, reaches its peak. The colder the weather gets, the more astringent the persimmon becomes and the sweeter it tastes, resulting in delicious dried persimmons. Koro-kaki" persimmons are rich in dietary fiber and a treasure trove of pectin, carotenoids, and vitamin C. The orange "tama-sudare" (bamboo screens) that line the eaves of farmhouses have become a winter tradition.
